My hubby loves to hunt - everything. I've had a very hard time finding a decent recipe for goose, which is one of his favorite game birds. The following recipe is absolutely excellent! The meat is just a tad tougher than beef and has a mild beefy flavor. If you know what shredded beef looks like, the shreds of goose meat are just a tad longer. Other than that, you'll think you're eating beef. Finally a way to empty my deep freeze of all those goose breasts!!
Crockpot BBQ Goose Breast
2 T butter
1 clove garlic, minced
1 small onion, sliced
1 goose breast
1 1/2 Worcestershire sauce
2 cups chicken broth
Your favorite BBQ sauce
Melt the butter in a large skillet over medium heat. Add garlic and onion; saute for 5 minutes. Add goose breast and brown on both sides - about 5 minutes. Transfer goose, onions & garlic to a crockpot. Pour Worcestershire sauce over meat. Turn heat on skillet down to low and pour in the chicken broth. Deglaze the pan and pour the contents into the crockpot. Cook on High for 6-8 hours or until meat shreds easily. Drain and shred w/a fork. Mix with BBQ sauce.
